Summer Fresh Fruit & Sea Bass Salad with Mango Sesame Vinaigrette

On those hot summer days this salad can be made for one or for a group. Just adjust quantities accordingly. This recipe makes one terrific spa inspired salad.

  1. Line plate with:
    Greens
    1 handful of pea sprouts
    1 handful of mesculin mix
  2. Finely Dice and place on top of greens:
    cantaloupe
    honeydew
    pineapple
    watermelon
  3. Make Mango Sesame Vinaigrette Dressing:
    1 oz mango puree (can be purchased in a can or make your own by chopping one mango, saute briefly in a saucepan over low heat with a dash of brown sugar or maple syrup to break down the mango and then puree and let cool).
    ¼ cup of apple cider vinegar
    ¼ cup of olive oil
    ¼ cup of sesame seeds toasted
    Dash of chipotle puree
    Whisk all ingredients together and drizzle over salad
  4. 8 oz fillet of Sea Bass
    Grill or bake until done, about 15 minutes, and place on top of salad.
    (Alternatively, you could top with chicken or any other fish if you prefer.)
