Come try it anytime but for when that craving hits after club hours, here are Chef Mike’s tips for roasting your own perfect peameal:
1. Purchase a 2-4 lb piece of whole peameal bacon.
2. Place in a preheated 325 degree oven in a roasting pan with 1/2 inch of water and a tight fitting lid.
3. Roast until meat reaches an internal temperature of 165 degrees farenhuit. Turn oven up to 375 and crisp for 15 minutes.
This technique will produce a juicy moist and crispy crusted roast of peameal; perfect for a great centrepiece at your brunch table.
