Combine three types of your favourite lettuce; my favourites are included below:
1 head blanche frisee lettuce
1 head bibb lettuce
1 package baby spinach
Wash and dry lettuce leaves and place in serving bowl.
Prepare vinaigrette, as follows:
1/2 cup Champagne vinegar
1 1/2 cups olive oil
1 fresh chive, finely chopped
Salt and pepper to taste
Combine all ingredients for vinaigrette. Season with salt and pepper according to taste, and add more vinegar as necessary. Pour vinaigrette over lettuce leaves and toss lightly. For added crunch consider adding roasted cashews, pine nuts or even trail mix.
